🌿 Ingredients in Jibrin – A Taste of Palestinian Home Cooking

The recipes in Jibrin celebrate the vibrant, seasonal ingredients that form the heart of Palestinian kitchens — from sun-drenched olive groves to family gardens and local markets. These are the staples, spices, and heirloom flavours passed down through generations.

Staples & Grains

  • Chickpeas (dried found in supermarkets and grocery shops, and tinned in most ethnic shops)
  • Fava beans (dried found in supermarkets and grocery shops, and tinned in most ethnic shops).
  • Basmati rice, available in most ethnic shops.
  • Egyptian medium-grain rice, available in most ethnic shops.
  • Freekeh (roasted green wheat, can be ordered from Izz Cafe, or your local Arabic or ethnic shop)
  • Maftoul (Palestinian couscous, can be ordered from Izz Cafe, or your local Arabic or ethnic shop)
  • Semolina, available in most of grocery shops and supermarkets.
  • Plain flour, available in most of grocery shops and supermarkets.
  • Milk powder, available in most of grocery shops and supermarkets.
  • Cornflour, available in most of grocery shops and supermarkets
  • Baking powder & baking soda, available in most of grocery shops and supermarkets.
  • Sugar (caster and granulated), available in most of grocery shops and supermarkets.
  • Salt (non-iodized sea salt), available in most of grocery shops and supermarkets.

Dairy & Alternatives

  • Jameed, dried yogurt preserved in salt. Can be ordered from Izz Cafe.
  • Full-fat plain yogurt (Bulgarian or Greek-style). We highly recommend the Bulgarian style yogurt that tastes a bit tart and is less thick than Greek. It's the style we use in the Levant. In Europe, it can be found in East European supermarkets like Moldova, Mercury, Polonez and others.
  • Labneh (strained natural yogurt). We make our Labneh from Bulgarian style, if you live in Cork you can get it from Izz Cafe, else we recommend following the recipe in Jibrin and make it. You can still use the Turkish style labneh from your local ethnic store, but it won't taste like Palestinian because it's based on Greek Style yogurt.
  • Mozzarella. what's better than local Irish cheese? If you aren't in Ireland, you can buy it from your local shop.
  • Kaymak (clotted cream – or mascarpone substitute). Available in ethnic shops, like Middle Eastern, Turkish or Greek.
  • Ghee. Available in most shops.
  • Butter, we can't recommend any butter than Irish. We hope you can source it in your local country.
